I make a tofu egg salad and put it in my potato salad! Don't forget the black salt!!
My favorite is potato salad but I would add chopped New Mexico Hatch green chile. Sooooooo good!

do you put macaroni or potato in egg salad? no? then WHY do you put egg in macaroni AND potato salad. that don't make no sense.

Honestly I know it sounds weird but in my potatoe salad instead of pickles I use Kalamala and green olives. I just love olives.
