  1. I am trying this recipe today. I will omit the 2 green chilies, add more turmeric (I love turmeric), and follow your suggestion of adding some green peas. I don't have mango powder or asafetida. I live in the southern end of the Central Valley of California and when the weather gets hot, Indian food seems especially tasty.

  2. This was the first Indian recipe I ever made. It's still the best Aloo Gobi recipe in my opinion. Too many others are a little too wet. Yours has the perfect texture. Sticks to your ribs. Real comfort food. Thank you Manjula. I remember when you were one of the first cooks on youtube that made good home-cooked Indian food.

  5. Has anybody noticed that this woman does not use garlic and onions in her cooking? These are the two most health promoting ingredients.
