  4. Don’t hold in your hand. Simply torch in the sheet pan. Then there’s no chance of burning your hand. Also, instead of a ladle, you can use a paper towel to skim off the bubbles. Just be careful not to dip in too deep and soak up some of the delicious custard.

  5. If you want a stronger vanilla taste, add your vanilla stems to your milk while it scolds. It will release more flavor than just the seeds.
