  2. I used sliced white and portobello mushrooms. I did have to add the cornstarch and water mixture, but I only added 1/2 of the amount suggested. I also only added 8 cups of stock, not 12 cups (3 qt), the suggested amount. I used chives instead of parsley and drizzled some toasted sesame oil on top. TY for sharing this recipe… it is "lick the spoon" good. 😊

  3. Great recipe! My first try came out ok except I added the flour late and added too much of it. In the end, it tasted ok. I added some water and coconut milk and it tasted better. Wish I had a hand held blender. Thanks anyway!

  4. I found this video while looking for this soup made from scratch…. americans really can t make vegetable brought on their own and use it from the can. Truly disappointed

  5. the mystery of the rue that fails to thicken? –

    I hav made this recipe at least two times before and it has always turned out perfect, but this time it turned out watery – What did I do differently? I followed the recipe rather than the video and thus didn't stir in the flour much, just a perfunctory stir really, maybe the flour needs a good stir to warm it up, activate it, the second thing I did different was I used cold stock, defrosted some frozen stock and used that, maybe this affected the activation of the rue, maybe a combination of the two? Maybe this is the mystery of the rue that fails to thicken.

  6. OMG this soup recipe is so full of mushroom flavor! I made the small bowl version of this recipe as I was going out of town the next day. I only had a red onion but followed the saute time & directions. I only had sherry instead of white wine and used 8 oz. of crimini mushrooms. I don't really measure anything so the visual of this recipe was very helpful. I didn't put the soup in a blender as I love mushrooms and wanted them chunky but I did chop them finely. My soup thickened nicely and I only had dried thyme. You can't go wrong with this simple, fast mushroom recipe. Thank you Chef Parisi!
