  1. Thank you! Perfect guide. Straight to the point. Just made a filet mignon myself and was crazy good. No need to sear sides and I recommend adding a little black garlic butter or some chimichuri for when its resting.

  2. 135 and rising? That's medium well to well done. Way overcooked. Filet should be removed from the heat at 100-105. Once rested, it will be 115, which is a perfect rare.

  3. Can you cook any steak like this? I have made this with filet mignon and it is amazing. I have a top sirloin and wanted to cook it like this but Iโ€™m not sure if I should attempt it. I donโ€™t want to mess up this steak.
