Piece of advice, if you wanna prevent your eyes watering when cutting onions, breath threw your mouth not your nose as you cut them.

That “jam” looks like it can be used on so many things

Put a wet paper towel on the cutting board to help with the onions 😁

Just made these (although with some chipotle tabasco instead of peppers in the tomato jam because I'm a wuss) and red onion since I didn't have any white or yellow. I made the CARDINAL MISTAKE of buying these almond flour tortillas from Whole Foods, and made the first few burritos with those. I realized they are TRASH and should not be called tortillas. Made the last two with regular flour tortillas so hoping at least those are good. And even with my minor changes, the tomato jam is really delicious and so glad I found it. One question – do you use light or dark brown sugar? I found discrepancies between a couple of places you have the recipe.
