I’m Mexican, our cornbread is more like a cake, sweet, we use condensed milk and corn kernels, in addition to either cornmeal or maseca for tamales. I’ve never made it using a cast iron skillet, will give it a try next time.

The last time I made cornbread I used an 8 inch cake pan. Came out just fine without the cast iron skillet.
I've never used sugar in mine and it browns up great.
