Mizithra is a Greek cheese. Goat cheese. Spaghetti factory blends it with Romano and dusts Italian parsley on top. Sprouts market sells it
Mizithra is not easy to find . I grew up eating that same dish at the Spaghetti factory too!

I make this often! I’ve even made it for potlucks! So easy, tasty, and satisfying! My kids call it “M-cheese”
I do roast green beens with Mitizthra, pepper, olive oil and garlic. The cheese is a bit salty so you dont need salt.

I don't eat tomatoes much anymore. I might try it but will probably have to use a different cheese. I don't remember seeing myzethra cheese before.
Greek pro tip Sam… you sprinkle some of the cheese into the pan while you are melting and browning the butter.

Quick question… As a retired Greek/Russian Astronaut and with attention to detail… What kind/type butter did you use for this recipe? As a rocket, physics astronaut, we would only use premium, salted butter mixed in with the rocket fuel, then wait to "fart" for launch! What say you?! =)
This dish has been my go-to dish at the Spaghetti Factory on 5th Avenue in San Diego since 1980. Way before it became the Gas Lamp district. You can also pear it with the clam sauce as your Managers Favorite hearty portion. 😋

This is like a very rare Greek pasta recipe, respect for finding it. GREEK PRO TIP: It is served with a sunny side up fried egg, that you break over the pasta and yolk oozes over it. Drooling as I type it

Sam next time try the real thing Cretan pasta . It is pasta boiled on lamp broth with mizithra cheese ( or athotyros as some Cretan area's say it). By the way Crete is the biggest island of Greece
