My Lebanese friends think I’m a philistine for adding cucumber to my tabouleh. Have you tried soaking your bulgur in lemon juice, rather than water? It takes it up a notch.

I grow Persian cucumbers, Kirby cucumbers, and gherkins every year in my garden. I have 28 Roma tomato plants. I eat cucumber salad all the time. I have to admit I have never had the first salad you showed. I will be giving it a try. Looks great, thanks for sharing.
Thanks chef Billy, just a side note, traditional tabbouleh doesn’t take cucumber and the parsley chopped fine and only once. I love your cooking techniques.

Thanks, Chef Billy! Just made this last night. I like to pickle the red onion before adding them to the salad.
I'm not a huge fan of parsley, so when I make this, I use a proportion of 3/4 minced baby spinach to 1/4 minced parsley. It's not "authentic," but it's really, really good!
