Hello — another great recipe, thanks. I don't think you've ever done this, but I think it would be great if you did an episode on masalas, their uses and combinations. What dishes use amchor, vs tamarind… why shaee jira vs regular… using chaunk vs blending spices into a curry, etc… I think a lot of amateur chefs would appreciate this. Thx.
