To get you started, we’ve split this Ratatouille Lasagna recipe for you and your loved one to equal up on the effort and double up on the excitement.     Cooking time with your better half: 40 minutes

    Chef 1:

    Ingredients:

    1 eggplant

    2 zucchini cut into cubes

    1 large red pepper cut into cubes

    1 large capsicum cut in cubes

    1 large yellow pepper cut into cubes

    3-4 ripe Roma tomatoes cut into cubes

    1 tbsp garlic, chopped

    2 tbsp olive oil

    Procedure:

    Heat a pan and add olive oil.

    Saute the onion and garlic until it appears translucent in colour.

    Add in the other vegetables and herbs and cook for another 5 minutes. Add the seasoning and give Chef 2 a quick taste test. It’s all about to come together!

    Chef 2

    Ingredients:

    3 cups tomato passata (puréed tomatoes)

    350 g lasagna sheet, cooked

    3 tbsp shredded basil

    1 tbsp fresh Thyme chopped

    2 cup ricotta cheese

    1 cup crumbled feta cheese

    ¼ cup parmesan, grated

    1 tsp Sea Salt

    1 tbsp Black pepper

    Procedure:

    Pour in the tomato puree over the base of a large baking dish.

    Spread the lasagna sheet on top of that and spoon in the prepared vegetables.

    Repeat the same process and arrange the layers in the baking dish.

    In a bowl, mix together the basil, ricotta, feta. Season well with sea salt and freshly ground black pepper and spoon the mixture over the lasagna.

    Sprinkle with the parmesan and bake for 15 minutes at 180 C. Serve hot and enjoy with your better half!

  2. I made this recipe, followed every step, and wow, it tasted very good! I got complements from some hardcore foodies during thanksgiving for this dish, so I'd recommend it 🙂

  3. Tasty recipe but not very filling. Always found myself hungry less than 1/2 hour after each meal, regardless of the portion size. Also took a very long time to complete the recipe. Have mixed emotions about this one.
