Frenchie here. When I make aligot, I use both Gruyère and mozzarella to get the stretchiness if I’m not able to get any Tomme.

Hi Sorry to tell you that this is NOT the good tome you bought. The one you need for Aligot is a "tome fraiche", a hard pressed curd, slightly fermented and unsalted based on cow's milk. It's usually cheese at 1 or 2 days of age. I believe it should so far from the real Aligot…..
