  1. It seems really good overall, but nobody talk about the fact that the wine is not getting cooked off before getting incorporated it in the slow-cooker? The lid trap water and alcool vapor, so a low heat will keep the alcool in the stew. Just cook your wine before (so the stew doesnt taste like coktail), and keep everything else they propose intact (+ a little seasoning at taste).
