  3. You can spatchcock chicken much more easily. This version is the chefy one. You simply cut the backbone out with kitchen shears and then press on the breast to flatten it. This method breaks some of the bones he remouved in the vid, but is faster and easier, and said broken bones pose no problem in carving later
