  1. I always mix parsley insde the ganoush like to ad some lemon skin. Sometimes i like to add a little roasted and ground up nuts to the mix (Almonds, Pistachio)

  2. I am definitely going to try this, looks absolutely delicious. Aubergine is also nice cut into chunks tossed with olive oil, seasoned, then roast as you would potatoes. Good in the air fryer too.

  3. There should never be cumin in hummus or Baba gnoush. That’s a very west coast US regional thing. East coast and Arab transplants on the west coast know what I’m talking about. The only “legitimate” spice to use is some hot paprika sprinkled on top along with oil oil.

  4. I don't know if you will trust me i am arabian from Syria .. but this is not baba ganoush it is Mtabal and we didn't put this huge amount of garlic .. we put 2 fresh garlic without cooke them .. you should try it

  5. Just to give you some tips, if you blend it in the food processor or cut the eggplant with a metal knife, it will give it a bitter aftertaste and discoloration. It's better to use a wooden spoon to take it out of the shell and a plastic or wooden knife to cut the eggplant. Cheers!
