So looking at pics on line, I'm thinking it's Beyond beef, but it seems like the white bits are more or less visible in both brands (Beyond & Impossible) depending on lighting? Because I can find images that seem to show them and that don't, but the overall texture looks at a glance closer to Beyond… in the photos! So I defer to more experience, I've only worked with either a small amount. And–here's my thought–I strongly suspect both would work admirably!
