Caprese Pasta Salad – The Perfect Summertime Recipe!



A classic summertime staple I make for pretty much every occasion. Super simple and easy and always a crowd favorite!

CAPRESE SALAD RECIPE:
8oz of Uncooked Orecchiette
2 cups of Cherry Tomatoes (or any kind of sweet ripe tomato) halved
8oz of Mozzarella, diced
Lots of Fresh Chopped Basil and Parsley
Pinch of Dried (or fresh) oregano

For the Dressing:
1/4 cup of Extra Virgin Olive Oil
1 and 1/2 tbsp of Balsamic
1 Tbsp of Lemon Juice
1 Clove of Garlic, grated
Salt to taste

  1. How much pasta will you use for this salad if you’re having 36 people? I’m making it for 30 on Thursday and got three pounds of orecchiette. Maybe will do 2 boxes only. It’s being served with a few other dishes.

  2. Lovely fresh salad! Regarding the Pesto. I purchase the large plastic container at Cost Co. I freeze the entire jar in my freezer and it is pretty easy to scoop out what I need as I need some. Never goes to waste! I learned this from the comment section here on YouTube.
