Cheese Lover’s Fall Macaroni and Cheese



A fantastically fall take on a cheesy classic that you will absolutely LOVE!! I promise this isn’t overly pumpkin spices, it just adds a note of warmth and richness and it’s just so good!

RECIPE:
3 Tbsp of Unsalted Butter
1 Shallot, finely minced
2 Cloves of Garlic, minced
3 Tbsp of All Purpose Flour
2 cups of Whole Milk
1/2 cup of Heavy Cream
1/2 cup of Pumpkin Puree
Pinch of Nutmeg
10oz of Medium Shells Pasta
4oz of Grated Gruyere
4oz of White Extra Sharp Cheddar
4 oz ofLow Moisture Mozzarella, shredded
2oz of Parmesan Cheese
1/2 cup Breadcrumbs
2 Tbsp of Olive Oil
4 Leaves of Fresh Sage
Salt and Pepper to taste

  1. 🚨 THANKSGIVING GUIDE Idk where to ask this. Im interested in buying the guide if I can get some more information about what Im getting. What would REALLY be helpful is the schedual of when to cook what and how to plan the prep and cook stuff. This has always been my biggest challange with entertaining. I would definitely buy the guide if all of that is layed out. I dont need just more recipes

  2. I will try this, it looks marvelous. For all you skeptics out there, pumpkin is wonderful in savory dishes. A friend who had lived in Sierra Leone many years ago came home with a recipe for a stew made of pumpkin, tomatoes and chicken. It blew my mind, it was that good. Pumpkins/squash and tomatoes are a match made in Heaven

  3. You should’ve put “Pumpkin Mac n cheese” in the title. Video would get more views because that actually sounds interesting. But instead you titled the video “fall Mac n cheese” which just sounds like… nothing.
    Not sure why you’d do that, but you should definitely edit the title of the video.
    I have tons of other notes/advice that would make this channel blow up and be more relevant, so hit me up Laura. I got you 😉
    Your husband clearly isn’t much help, aside from holding that camera.

  5. I just made this!!! lol! I make my own version of pumpkin Mac and cheese this time of year using squash/pumpkins from my garden. One of my favorite fall dishes. The sauce is amazing on ravioli too!! And in a pumpkin lasagna. I don’t use flour or butter or onions. I warm heavy cream, a glug of whole milk, and my cheese mixture in a pan with a couple cups of pumpkin purée and finish cooking the pasta in that sauce until the pasta is fully cooked and the sauce thickens. Perfect every time and the sauce doesn’t get clunky when refrigerated and reheated because there’s no flour. I highly recommend the Swiss and Gruyère cheese blend from Trader Joe’s! It’s perfect in any Mac recipe!

  6. I've made a version of this for the last few years since my adult son was vegan: served it at a dinner party and nobody knew it was vegan. Fast forward to today butter, milk and cheese are back in, everybody loves it and nobody knows the secret ingredient! Definitely a good recipe to give tokids who don't like their veggies!

  7. I've been watching you since I was in high school – I'm 27 now and you've really taught me how to cook! My grandmother was from Italy and of course a fabulous cook but she never let anyone else cook, so my mother never learned! Having your videos to teach me as i've grown has truly made me feel more connected to my culture, especially once her cooking was no longer an option – thank you!
