  1. Do the same thing with your ginger except KEEP it in the freezer to make it last longer. When you need to grate some, just grab it from the freezer and grate away and then plop the left over part you didn't use back in the freezer. I only need to buy ginger a few times a year – if that- and I use fresh(frozen) ginger 2-3 times a week.

  2. I imagine that freezing them would also improve juicing them. Since water expands when it freezes. Let the citrus freeze, zest it, let it thaw then juice it. I'll bet that works. It's also why cryogenics doesn't work.
