Grating fresh cheese (I am thinking in particular of the great freshly grated Parmigiano Reggiano cheese) is a whole other thing ! It has a whole other aroma than the one bought already grated in sachets. It is a bit like fresh grated pepper (or nutmeg) compared to the already grated one …..a big difference !
