ITALIAN WEDDING SOUP INGREDIENTS:
For the meatballs:
1 lb of Ground Chicken
1/3 cup of Breadcrumbs
1/3 cup of Grated Parm or Romano
2 Cloves of Garlic, minced
1/4 cup of Fresh Parsley, finely minced
1 Tbsp of Garlic and Herb Seasoning
1 Tbsp of Olive Oil
1 Egg
Salt and Pepper to taste
For the soup base:
2 Tbsp of Olive Oil
1 Yellow Onion, finely diced
4 Stalks of Celery, diced
4 Carrots, peeled and diced
12 cups of Chicken Stock
5oz of Fresh Baby Spinach, washed
Salt and Pepper to taste
Rind of some authentic parmigiano, optional
Freshly grated parm
1lb of Frozen or Fresh Cheese Tortellini

I wasn’t expecting a lot from this recipe- Laura even said you won’t wow anyone. I made it yesterday as a starter and it was the best soup I’ve ever made. I used ground chicken thigh, as I didn’t know which to get. I followed this to the letter and I was stunned at how complex and perfect it was. 11/10.
I've made this several times since I found the video. Normally I use ground turkey. Today I'm making it with Italian sausage squeezed out of the casing instead of ground sausage. Smells great so far.

Help! I don't have any recipes from the Italian side of my family. I make a very basic Wedding Soup from a recipe I found on the internet, but yours looks much better. I want to make something my family might have made in the past. All my grandparent's parents were from a town in the Basilicata region of Italy, Trivigno. Do you know any soups or pasta dishes from that region?
I don't recall much about my Grandmother's cooking, pork neck bones in a rich gravy that was not sweet, but mostly basic American Italian. I remember Papagrande saying they kept goats in the backyard when he was a kid and goat was very good. The internet says recipes from Basilicata were mostly vegetarian because the area was so poor.

It looks amazing! I miss stuff like this. Haven't had good Italian food since I learned that I can't eat onions and garlic. One day I'm going to have to figure out how to make things like this without such important ingredients, but where it will still be flavorful.
