Sam I live in the Philippines PLEASE MAKE A LECHON BABOY ( whole pig rotisserie over charcoal uling ) I watch every show you make I'm from Canada ! keep makin shows , start small with lechon Manock ( rotisserie chicken over charcoal ) lemon grass and soy sauce are your friend , star anise is defiantly in the lechon baboy the pig skin is so crispy and the meat so fall apart tender . shout out to the Philippines

The way I do it is tomato sauce on the crust then Alfredo sauce on top of that diced grilled chicken, Mozzarella, Parmesan, crispy bacon crumbles, and chopped roasted garlic. I like to add red pepper flakes, dollops of ricotta, and Italian seasoning.

Very interested in trying it. Question: When you remove the membrane, why not flip the piece over and remove it the same as skinning a fish – membrane/skin side down flat on the board? Much easier.

HP is great with beef. My usual binder is Worcestershire sauce. Never tried HP, but it sounds great.
