I love Olive Garden. I love chicken Marsala. I’ve never eaten chicken Marsala at Olive Garden.

I had the chicken marsalla at Basta in Little Itally this weekend. It is insanely good.
Kinda half right on the Red Lobster thing. Darden sold the company to an Asia Enterprise and they own and still own the largest Shrimp company in the world. It basically turned into a business to sell shrimp.
Red Lobster correction: Red Lobster didn't go out of business because of their AYCE Shrimp promotion. What they did, as a corporation minded restaurant would do… They created a shell company, and sold the real estate for the restaurants to the shell company. Red Lobster owned some great real estate, but they sold it to their own shell company. Then they charged higher rents to their restaurants, that had previously owned the property they were built on… And when they couldn't pay back the rent, they went under.
You can buy a house, wait for it to appreciate value and then sell for a higher price on the market… Or… You can burn your house down and cash in the insurance. Red Lobster burnt down their own house to cash in the insurance check.
So because the restaurants went under, the restaurants were shut down, and the land was now free to be sold to whomever for a lot more than when they acquired it. It's called "Vulture Capitalism". You have a business that needs financial assistance, and an investment group comes in and essentially guts the operation. Liquidate the assets, make whatever money they can leading up to it, and then walk away with the spoils.
So the executive branch walks away with ownership of the real estate. Stockholders/Shareholders lose all their equity. This is a story that has occured over and over since around the great recession. Bain Capital was the first to do this "Vulture capitalism" and made a fortune going in, gutting companies, and walking away with the golden egg. People that had pensions with a business, lost those pensions because that pension fund was gutted and taken away by these investment groups.
The obvious reason it is BS, is because as a restaurant, if you need to buy more shrimp, you buy to meet demand. If no one wanted the AYCE shrimp, they wouldn't order more the following week. If the demand was too high, is that because people are ordering too much? If they are, raise prices to meet that demand. If the volume of shrimp being eaten is unsustainably high, then as a business, you halt the promotion. I work at a restaurant that offers AYCE ribs as a promotion. Anytime we ran low, we ended the promotion that day due to low inventory.
AYCE Shrimp did not bring down Red Lobster. Vulture Capitalism did.

Red Lobster filed bankruptcy but is still open in Stockton CA. I called them today and asked about the all you can eat shrimp they used to have on Mondays. They said they still have it for $27.00. By the time I drive there and back from Lodi, get Iced Tea and leave at least 18% tip. I can't afford that. Gone are the good old days. 😢

This was surprisingly true to form, I almost expected some soy sauce lol 😂 —- I don’t put cream in mine, and serve with mashed potatoes, and a lot more wine, green beans with shallots is a fitting side

Nice variations on a classic.But there is NO substitute for Marsala; otherwise, it's not chicken Marsala.The flavor of the Marsala is everything.I like to add an additional few tablespoons of Marsala at the end, just b/f serving.
