biggest issue is starting to baste at 115. that’s the reason it turned out medium pushing medium well. should start basting like at 90 or 100…. like really, why not? it’s just more basting. more butter is good lol. more basting is good.

Steaks don't need to be dry aged for more than 45 days. Longer dry aged doesn't mean better

First time I ever had dry age was my honeymoon and it was a 90 day 3inch porterhouse. It ruined me lol, 90 days or nothing for me.
