Skillet Chicken Stroganoff – The Weeknight Recipe You Need!



An easy but flavorful recipe that takes very little time to cook and very little effort but delivers on big flavor and we love that around here! Chicken is just such an easy go to protein that most people feel bored with after a while but this recipe takes that humble chicken breast and gives it a real boost of flavor and texture and if you can do that in under 30 minutes then thats even better! You must make it, you will just love it!

RECIPE:
1lb of Chicken Breast, thinly sliced into small pieces
3 Tbsp of Flour
10oz of Cremini Mushrooms, thickly sliced
1 Small Yellow Onion, minced
3 Cloves of Garlic, minced
3 Tbsp of Light Olive Oil
2 Tbsp of Unsalted Butter
1 1/4 cup of Chicken Stock
1/3 cup of Sour Cream
1 Tbsp of Dijon Mustard
Fresh Chopped Parsley
Salt and Pepper to taste

  1. Imade this last night for dinner and O. M. G! It was so good! I could not get cremini mushrooms but had some wild mushrooms, girolles and chanterelle, thatwe had foraged the other day, alongside some oyster mushrooms. Oh my goodness it was so lush! You are right, even before making the sauce for it, it all smelled so good I could have just eaten as is and I will be making it as a side with a roast dinner with a Cornish game hen, partridge wood cock, duck or even with rabbit.
    I am a celiac, so used a gf mixed all purpose flour to dredge the chicken in and rice to serve. I used a mixture of brown basmati rice and wild rice because I felt it would go well with the wild mushrooms. I was delighted with how it came out as was hubby. He enjoyed it so much that he wants it for his birthday dinner! Depending on the protein used, I might add a splash of whisky or brandy just to enrich it a wee bit more. But as it was last night, it really could not be beat! Thank you for the recipe, the flavours were absolutely perfect.
