I made this for dinner and it is so good. My wife who's not the biggest stir fry fan ate her entire bowl.
Such a delicious stir fry, and so easy, definitely going to put it in the regular dinner rotation!

I just made this and it was great. I used Walmart Szechuan sauce and noodles and Safeway precut veggies. Plus my own mods. Raised the bar for myself.
MARCH:
MEXICAN/NACHO INSPIRED CHICKEN PARMY
Flatten chicken breast to about 1cm thick.
Mix taco/mexican seasoning with flour
Whisk egg crush favourite Doritos
Bread chicken flour mix egg then Doritos
Fry until golden top with enchilada sauce cheese put in oven to melt cheese top with pico quac and sour cream
Day 20 of commenting until you chose me to win the knife
March:
1½ pounds livermush
2 medium onions, diced
1 tablespoon sugar
1 can cream of mushroom soup
6 medium potatoes
½ stick butter or margarine
½-1 cup milk
Salt and pepper to taste
2 cups grated cheese
Cut livermush into ½-inch slices, and fry until crispy. Drain the slices on paper towels; then lay them edge-to-edge to cover the bottom of a 9 x 13-inch baking dish.
Sauté onions until well browned, sprinkling sugar over the onions as they’re frying to help them caramelize. Spread the sautéed onions over the livermush slices.
Using a rubber spatula, spread soup, undiluted, over the onions and livermush.
Peel and boil potatoes to make mashed potatoes, adding butter and milk to the cooked potatoes before whipping. Add salt and pepper to taste, and spread the potatoes in an even layer on top of the mushroom soup, onions, and livermush.
Top the casserole with cheese. Bake at 400° for 30 minutes or until the cheese is bubbly and beginning to brown. Serve with ketchup or your favorite steak sauce.

Masa Corn Flour Parpadelle with Birria ragu
Birria
2-3 lb Chuck Roast
5 ancho chiles
5 guajillo chiles
2 chiles de Arbol
2.5 quarts beef stock
6 bay leaves
2 tbsp Mexican Oregano
1 yellow onion
8 garlic cloves
Salt to taste
Remove stems and seeds from chiles. Toast lightly in a cast iron skillet. Place toasted chiles, garlic, Mexican oregano and onion in a blender with boiling water to cover. Cover and let steep until chiles are softened. Blend smooth.
Cut pot roast into about 1 inch cubes, season well with BFF and brown in a large cast iron dutch oven. Brown in batches to avoid overcrowding. Once all the meat is browned return to dutch oven with blended peppers and the beef stock. Braise until the beef is fall apart tender. Of course use your pressure cooker/instant pot if you prefer.
Masa Harina pasta
150 g "00" pasta flour or bread flour
150 gr masa harina
2 tsp Diamond Crystal Kosher salt (or 1 tsp table salt)
185g wet ingredients* * Wet ingredients: 2 large eggs 3 large yolks weigh the eggs and yolks then add enough water to get to 185 grams total
Place all flours and salt in a food process with the blade. Weigh wet ingredients into a measuring cup. Start the food processor on low speed, slowly drizzle in the wet ingredients until the dough comes together in a ball. Remove from food processor and need until smooth. Cover in plastic wrap and let hydrate for at least 45 minutes. Roll pasta into sheets. You may need to run through the pasta roller on widest setting several times to smooth the dough. Cut into parpadelle strips.
In a large skillet or wok, heat the birria along with the consume, Bring a large pot of salted water to a boil. Cook pasta no longer than 2 minutes. Transfer pasta to pan with the birria to finish cooking. Add pasta water as needed to thin the sauce. Server with chopped cilantro and cotija cheese.
