Made this today with "flavor bomb" tomatoes. It was DELICIOUS, but wayyyy too may skins. Are campari tomatoes a good substitute? I have these on hand and would like to to try it again!
This was amazing ๐ I didnโt have basil so I left that out and added Italian seasoning ๐ซฃ. I also kept the garlic in because my husband likes it. So simple, but SO FLAVORFUL! Too good!

The first time I had this was a cooking class in Montepertuso Italy a few years ago. Ever since then, I have been growing cherry tomatoes in my garden just for this recipe. It's so light and fresh and tastes like summer in a bowl. Thanks for showing just how easy it is!

This has become one of my favorite meals. My advice don't rush the sauce. I find that if I cook it down longer it becomes all the more flavorful.

This is one of my favorite year round go-to recipes. Sometimes I'll roast the tomatoes in the oven with a splash of balsamic vinegar first; yum!
