  1. Love this recipe and will be making it for a baby shower that we’re hosting for our son and DIL. I’m smoking the chicken and cheese and mixing all of the ingredients on the day before and then just heating it up on the day of the party. Hope that works out! Thanks for the great recipe – it suits our tastes perfectly.

  2. Utilized my regular gas grill to do the smoke. I made a makeshift smoking caddy by hand with folded aluminum foil. I then poked a bunch of holes in the bottom of the caddy. I then placed water soaked mesquite wood chippies into the caddy. Then I placed it into the grill above the flame on one side and kept the grill at 225. I then placed the seasoned cream cheese on the cool side of the grill in a pan. I had a nice smoke going with the make shift setup and it smoked that effing cream cheese to perfection. I did the chicken the same way and it turned out fantastic.

  3. Recipe for Buffalo chicken dip (link doesn’t work so here it is)

    Rub for chicken & cream cheese:
    1/2tbs garlic powder
    1/2tbs smoked paprika
    1/2tbs cumin
    1/2tbs brown sugar
    1/2tbs dry mustard
    1/4tbs black pepper
    1/4tbs chipotle chili powder
    1/4tbs kosher salt

    Smoked cream cheese:
    Season it, Diamond cut it, smoke at 225 degrees for about 2hrs

    Smoked Whole chicken:
    Spatchcock it (remove backbone)
    Pat dry, brush on Japanese Mayo and season,
    Tuck the wings and smoke at 375 for about an hour or until done

    Chop up about 2.5 cups of chicken and combine with
    Cream cheese
    3/4 cups franks red hot
    1/2 cup ranch
    8oz shredded Monterey Jack cheese
    3tbs truffle hot sauce (optional obviously)

    Pour into oiled cast iron pan, add Monterey Jack and crumbled blue cheese
    Smoke at 375 for about 20 min
    Optional: garnish with chopped celery
