  1. Leaving the membrane on helps hold the juices in the ribs with membrane off. When put it in the grill, the juices are just gonna fall out into the grill. So, leaving the membrane on holds the juices in and gives you a better flavor profile

  2. I do them like this, "hot and fast"… honestly prefer them to 3-2-1. Never used to eat pork, made these for the Mrs on my Kamado and now into pulled port and all sorts haha. Delish

  3. That a lie, you will taste the mustard, I dont reconmend doing that try witchshire sauce or olive oil as an a binder , it's better for me in my experience , just FYI
