  1. When you suggested adding lime juice, and then put in the thin slices without squeezing them, I shouted, "NOOO!!" I breathed a sign of relief when you brought in lime wedges and squeezed them.

  2. You needed to put on some grated parmesan cheese on your corn and when you cooked your chorizo you should not oil your pan. The Chorizo has plenty of fat that will prevent it from sticking to the pan and will leave enough rendered fat for sauteing your onions.

  3. As a Mexican, I would like to celebrate May 5th in the United States, since it is not a national celebration in Mexico, at most in the state of Puebla.

  5. My family asks for these enchiladas again and again. I make a more plan version with just the chicken and cheese with the cream, then I add in sauteed corn and onions. I always give Sam all the credit! Thanks for your dedication and always delivering amazing recipes

  6. I was always told that seafood and cheese doesn’t mix until I had the most wonderful shrimp quesadilla with a garlic sauce that is to die for.

  7. You need to go to Hussong’s Cantina in Ensenada Mexico to try the Margarita.
    Birth place of the Margarita. Since it’s about a three hour drive from San Diego, maybe a little more.
    Michelada is with tomato juice and the Chelada is without the tomato juice.

  8. 5 de mayo is not Independence Day, it’s to celebrate a battle that was fought and won in a war that was lost against the French army that was an occupying force and to protect an imposed Austrian emperor Maximilian of Hapsburg.
    Your food looks delicious, but it’s the American version of Mexican food, I should know cuz I’m ex pat living in Mexico.
