  1. I can't stand any runny raw egg anywhere… I cook one side until done but not brown, slide it off the skillet onto a plate or lid, flip it over back onto the skillet so the cooked side is up, and then add the goodies onto the cooked side of the egg, and then fold it over after a minute or so. I also don't like browned eggs, so the cooking on both sides not only gets the entire egg done, but prevents too much browning. The hash brown omelette was a lovely brown!

  2. The eggs in all of these are horribly scorched. Way too much heat. A genuine omelet must be cooked very gently leaving a velvety yellow surface. NEVER scorched. And omelets are rolled, not folded in half. You can call these an "egg mixture browned in a pan," or whatever you like, but they are not omelets.
