I love you Sam, but making that into a salad is a waste of a beautiful steak.
in my experience, Denver steak is not tender, it is fairly chewy, but it is cooked like a steak, is richly beefy, very tasty; if you can't get it at your local supermarket, try a butcher or go to the Chef's Store, buy a chuck roll sub primal and process it yourself, there are lots of videos on YouTube that will show you exactly how to do it .

If the only reason you're "befriending" the butcher is to get better meat you're not really their friend. You're taking advantage. You DNGAF about them as human beings.
Denver steak has been my favorite for well over a decade. I didn’t know them as Denver steak until the last 6-7 years, but there is a “wagyu” butcher shop near me and this is always the cut I get. It’s fairly cheap compared to other cuts that IMO aren’t as good
I can’t help seeing that hand in the background giving the Shocker. I gotta get me one of those. Gonna listen to some Steel Panther now.

just cooked my first Denver steak… Found it to be an incredibly chewy cut. would not recommend eating as a steak but more of a slow cook piece like possibly a short rib… Just my opinion though.

I’m sure I could have learned something, couldn’t watch/listen past the first 90 seconds, too many cuss words, totally unnecessary.
I served this to some friends in a toasted sour dough with garlic and butter , the steak on top, and they were blown away. Now they compete with me who gets the denver first from my butcher

Ok let me throw some info to you ! The denver steak has been a butcher secret since way before 2008 as far back as the chuck eye roast itself which is where the ribeye ends and the chuck begins on one side of the chuck eye roast is the chuck eye steak the other is what they now call the denver ! And remember there is No such thing as a NY strip it in fact the proper 7:45 name is the Kansas City strip ! Butcher 30 yrs !

It's not a new cut. Another name for this is boneless shortribs 😂 if you want to know the second most tender cut behind the tenderloin, which is the teres major or petite tender which is in the chuck primal.
Our local IGA includes 7, 1.5 pound 1 inch Denver steaks in their meat bundle specials.
I'm in the UK and just bought four Denver steaks on sale. I'm looking forward to the experience!

Sam, you need to check out The Meatry. It’s local wagyu shop here in San Diego. The owner there, Nick, is a cool dude and carries a wide variety of cuts, including the Denver Steak! I’ve bought it from him quite a few times and it remains my favorite cut; the Australian Wagyu specifically.
i dooo understand.. buuuuut… cmn youre holding the top line denversteak. this isnt what 'we' are getting.. look at the perfect lines on that steak. that just needs a little salt and pepper and your done. denver needs love.. and you could and would cheat on that girl

I saw a Denver Steak in the store the other day and I got it to try my Souvide for the first time.
It turned out great. Sort of tasted like Prime Rib.
