I made this for my wife and I. It was really good! Potato chips made it awesome. We had a lot of leftovers so a few days later I took the jus and thickened it with some flour, added the beef and then tossed it with parpadelle and finally grated some fresh parmagiano. Oh yeah it was good!

I’m in SW Virginia. We and NW NC have been hit hard by hurricane Helene, but this was the best comfort food that fed us for a couple of days during the bad times. With no power and a boil water advisory, I traveled to a nearby town that had power and a few meats left. I picked up the provolone cheese and a head of garlic, but couldn’t find a chuck roast. I did find a 2 lb London broil. I Cooked the beef in my instapot on a generator according to Sam’s directions. I cooked it a full hour with natural release. Afterwards I thickened the sauce with a corn starch slurry to make a wonderful gravy. I toasted the buns on my gas grill and served it as an open faced sandwich in the style of a local bbq joint called “brisket and gravy.” I made the sauce with sweet baby rays, yellow mustard, some soy sauce and worstershire sauce and some hot honey mustard. Definitely what we needed at the time.

I do this same thing, but I put my chuck roast on my pellet smoker for 2-3 hours before. Makes some of the best roast you've ever eaten.

He doesn't mention that it's going to take 30-40 minutes to naturally release the pressure. So we're talking more like 1 hour and 40 minutes to cook this.
