Chicken Tortellini – Summer Dinner In Under 30 Minutes!



A fantastic easy dinner that’s both quick to make but really special to serve for a crowd. You will love it!

CHICKEN TORTELLINI RECIPE:
10 oz of Chicken Breast cut into chunks (could be chicken thighs or even sausage)
Olive Oil
2 Zucchini, cut into bite size pieces
1 Yellow Squash, Cut into bite size pieces
1 Red Bell Pepper, cut into chunks
3 Cloves of Garlic, minced
Handful of Cherry Tomatoes, halved
1/4 cup of Pesto
Pinch of Hot Pepper Flakes or Teaspoon of Calabrian Chili in oil
Salt and Pepper to taste
Pinch of Garlic and Herb Seasoning
10oz of Fresh Cheese filled Tortellini

  2. Oh man this is already our favorite! It’s in our rotation and we have it weekly 😊 I love it that we use all the good things in our garden, and we have changed the protein a couple of times….. sausage, chicken thighs and love both. So good and super fast. I always make it with the red pepper flakes, but I have actually bought a jar of the Calabrian chilies in oil from Williams-Sonoma and I’m going to try it today

  5. Love it! I’d make a couple changes just for my preference but still looks incredible. I’d just simply remove the pesto because as hard as I’ve tried I just don’t like it and substitute it with simple fresh basil and then I’d add the tomatoes in a little sooner to get some of it all saucy to replace the sauce that you’re not getting from the pesto. I’d also just use baby corn or something to replace zucchini as I cannot stand zucchini because it tastes like a warm cucumber which just doesn’t feel nice in my mouth 😂😂😂

    I’m so persnickety as my grandma would say.
