What a comprehensive rizzotto video. Good1 Chef
I love you, Laura, but could you please retitle this video? I arrived here by searching "vegetarian" on your channel (and the title says veggie), but neither chicken stock nor parmesan cheese are vegetarian even though you do include some "veggies". I just ask that you represent what you are doing accurately and in alignment with dietary restrictions. Thank you for the video, just not the title.

One quick question–given the fact that you have space for a large garden and chickens–do you compost the ends of veges and onion/scallion peel? I would think they would be great in the ol' pile for use next year in the garden. Thanks.
Since when is chicken stock and parmesan cheese vegetarian?
I made this last night, first time making risotto and it was a success! It was so delicious, creamy – tasted like comfort! I didnβt have Arborio rice so I substituted it with Carolina regular white rice (not par-boiled). The high starch content in it made it work. Thanks Laura!

If you're making this for vegetarians, there are just 2 very simple adjustments:
1. Use vegetable stock instead of chicken stock (this one's obvious)
2. Do NOT use real Parmigiano! Just use any other hard cheese that is made with chymosin instead of real animal rennet. Real Parmesan has to be made with rennet, otherwise it can't be called Parmesan. Just check the package π
