A few tips though. Deeper plate. No midllle slice of bread. Cover the egg with the cheese slices. A little bit of acid (vinegar or mustard) in the sauce. My favourite sandwich in the whole world ❤

Cornstarch? You need to put a little potato in your veg, then when you blend the starch from potato will thicken, and most throw in some washyursista sauce!
The only thing that would make this better is if you were were to butter the toast before putting it together as i personally think it would add a extra layer of flavor to dry toast

I had this in Porto in June, it was a bit much for 1 person. Their sauce seemed less complex and thinner than yours and had great flavor, you could taste the beer . I am surprised you are tackling this odd sandwich.
