COCONUT CREAM PIE RECIPE:
1 9 inch Pre-baked Pie Crust
1 14oz can of Coconut Milk (about 2 cups)
1-1/4 cup of Milk
1/2 cup of Granulated Sugar
4 Egg Yolks
1/3 Cup of Cornstarch
1/4 tsp of Salt
2 Tbsp of Unsalted Butter
1 tsp of Vanilla Extract
1/8 tsp of Coconut Extract
1 1/2 cup of Sweetened Shredded Coconut

For the Whipped Cream:
1-1/2 cups of Heavy Cream
3 Tbsp of Powdered Sugar
1/8 tsp of Coconut Extract (optional but advisable)

  2. Looks amazing, Laura! Do you think you would be able to make a video for a "coconut poke cake" would loooooove that. Its one of my all-time favorite things in the world. Sooo delcious. I think you would really enjoy it.

  3. 1) Combine coconut milk and regular milk in a saucepan; heat gently. In a bowl, whisk egg yolks and sugar until pale yellow. Add cornstarch, mix well.

    2) Gradually add half the hot milk to the egg mixture, stirring constantly. Pour back into saucepan with salt, cook low heat 7 mins until thickened. Remove, add butter, vanilla, and coconut extract. Let cool 45 mins.

    3) Fold in coconut. Pour into baked crust, refrigerate 8 hrs or overnight.

    4) Serve with whipped cream and toasted coconut. Enjoy!

  4. This is my favorite pie. My mother use to bring me home these from her job when I was a kid. Fell in love. Still one of my favorite dessert picks. Homemade is even better. I don't make it a lot for family gatherings as many do not like coconut. Not sure how people hate coconut? But maybe I should make it🤷‍♀️ more for me. ❤

You are an inspiration to the world of home cooks who would rather be at home than in a restaurant paying double or triple the cost. Would you consider doing a series of videos just for kids? There is a whole world of possibilities with food and kids.

  6. PLEASE!!!! Listen to what Laura says about the coconut extract! Laura often says to" season to your liking", HOWEVER, this time she asserted such caution, suntan lotion territory!! I paid for not listening!!
