Don’t Miss This Short Rib Ragu Pasta!



A delicious sauce that feels so elevated from your usual meat sauce and one hat would be wonderful to have on the table around the Holiday season.

RECIPE:
3 Tbsp of Olive Oil
1-1/2 lb of Short Ribs, about 4-5
1 Yellow Onion, finely Diced
2 Large Carrots, peeled and finely diced
3 Stalks of Celery, finely diced
4 Cloves of Garlic, finely chopped
1/4 cup of Tomato Paste
1 3/4 cups of Red Wine
1 1/2 cups of Beef stock
Few Sprigs of Fresh Thyme
1 Sprig of Fresh Rosemary
Fresh Basil
Salt and Pepper To Taste

For Serving:
1 lb of Medium Cut Pasta such as ziti, rigatoni or penne
Plenty of Grated Parm

    As always, a fantastic recipe, beautifully explained. I've made different versions of this dish many times, and one variable in different recipes has been making the choice between slowly simmering the short ribs on the stovetop as opposed putting the pot (half covered) in the oven for several hours. Laura (and/or fan community), what's your opinion of one option versus the other? Many thanks in advance!

I just want you to know that I watched your video this morning and knew that when I go outside this rainy Saturday, that I will go to new seasons (popular grocery store chain in Oregon) and be buying some short rib, thyme, some extra tomato paste and veggies. And that is exactly what I did today. The food is simmering as I type this. My husband came into the room a few times and commented on the amazing aroma that has enveloped he first floor of our house. I know this is going to be fantastic. Thank-you Laura! You are my favorite chef and influencer!!

That I can get meal ideas is secondary to your need to stay focused on the message. Make another person happy by feeding them.
