Easy and Delicious Mini Meatball Soup



As the weather cools and school and activities are back in full swing, I’m ready for cozy, easy, one pot wonders that come together in a few minutes leaving me feeling relaxed and ready to tackle the evening. This one pot mini #meatball #soup #recipe is just so sensational, creamy, rich, full of flavor and so filling, your whole family will love it and it will become a staple in your recipe rotation this fall! Just what you need when you’re craving a pot of low and slow cooked meatballs and pasta but time and patience is short!

RECIPE:
For the soup base:
2 Tbsp of Olive Oil
1 Small or 1/2 of a Large Yellow Onion, diced
2 Cloves of Garlic, minced
2 cups of Crushed Tomatoes (or any tomato product of choice)
1 cup of Milk
4 cups of Beef Stock
2 tsp of Garlic and Herb Seasoning
2 tsp of Italian Seasoning
Fresh Basil
Salt and Pepper to taste
Hunk of Parmesan Rind, optional
8oz of Ditalini Pasta

For the Meatballs:
3/4 lb of Ground Beef
1 Egg
1/4 cup of Breadcrumbs
1/4 cup of Freshly Grated Parm
Fresh Chopped Basil or Parsley
1 Clove of Garlic, minced or grated
Salt to taste
Pinch of Italian seasoning

  1. I made this tonight and it is so freaking good! I used impossible meat (which conveniently comes in a 3/4 lb package) and the cooking times and amounts of seasonings were perfect. I often find one pot soups need more liquid than the recipe states, but this one had the perfect ratio. 10/10!

  3. I’m cooking your soup because my husband of 40 years is fed up with my usual ones even if they are the most delicious ones as per my children and especially my baby grandkids. Question for you: can I prepare a bunch of meet all in advance and freeze them? And then use them when I’m cooking your soup? By the way, the bouillon tastes great, cannot wait to eat it! Up date : it was REALLY delicious! My husband ate 2 bowls and he usually eats one…
