  1. Very delicious but there is no need to peel the eggplant, add water, bake , fry freeze, or to mash them.. ( unless you want to.) Just cut the eggplants add the oil and cover til soft. Therre will be not moisture, and air fry them if your stove has that setting. Thank, you Laura. Once again your recipe came through👍❤️

  2. I love, love, love this recipe!! I bake them as you do. I garden so I always have a lot of eggplant to use. Last summer, I made this recipe to freeze and use in the winter. It worked well! I also received an air fryer for Christmas. Turns out the eggplant meatballs were made for the air fryer. I pop them directly from the freezer to air fryer. I get a bit of crispy outside and they hold up better in my marinara sauce.

  4. I made the eggplant meatballs because I love eggplant. Unfortunately we did not enjoy them at all. I did follow the recipe precisely. They were mushy and lacked flavor. I'll stick with the cutlets or parmigiana.
