Tried the recipe, nice presentation when cut. The taste is a bit one note. It needs something to liven up the taste, maybe sundried tomato cooked with the spinach, or lemon juice with the spinach. I saw some other suggestions in the comments that would be good additions.

Have you considered using wooden cooking utensils instead of plastic? Delicious NE style sandwich, you will find a variation of this at many Italian American establishments.
There's a regional sandwich born in the 1950's in Nebraska and served from Omaha in the East to Scottsbluff near the Wyoming border and all places North & South of I-80 called "The Frenchie". It's a fried grilled cheese sandwich and pretty tasty depending on who makes it. There's a plethora of information to choose from if you would like to give it a try. I for one would love to see a STCG version!

This looks delicious. And it's got to be absolutely delicious with that Italian bread, cooked peppers and spinach, though I might try it one time by adding Italian breadcrumbs and egg layer to the chicken and fry it longer.
