Please don't call it Japanese. Soufflé pancakes were invented in Hawaii, by chef Nathan Tran in 2009, at his Cream Pot restaurant in Waikiki. Japanese chefs stole his creation. Just FYI.

I often use soup cans as molds, tall but thats ok once solidified and ready to flip gently remove the can.
use smooth sided as ribbed will make removal harder
