Yikes, this recipe is crazy. Not classic lumpia.
Normally, I wouldn’t precook the meat. Add egg, mix all ingredients, add it to the wrapper. Recipe is on par though. I must try cilantro. 👍🏾👍🏾
Why are you cooking the filling?? You make it, roll it.. and it cooks when fried.
wrapper tip! bend the wrappers on all four sides before removing from packaging then separate the wrappers in quarter amounts which makes them way easier to peel apart .
I was taught to pull wrappers stack in half first then pull them individually it makes it a lot easier
When I was stationed a marine barracks subic bay in the Philippines lumpia was a definite go to after leaving the bar, a big plate of fresh hot lumpia was almost a daily occurrence
My grandma used rice paper, she is born and raised Filipino. This was my favorite dish she made for family events and every single birthday party I had until she passed. Still make it to this day for friends and family to remind myself of her and our memories as a family. 🙂

I've never precooked the pork or veggies. Idk if it's necessary. And I usually use sesame oil…and refrigerated overnight so the flavors mix
Spent a lot of time in the Philippines while in the US Navy in the 1980s. Mostly in Olongapo, Cubic city, and Manila. Loved eating Lumpia, Pancit, Bihon of course meat on a stick all washed down with San Miguel Beer and Mojo. Finally a Balut , for staying power!😉
Notice some recipes cook the meat & others just mix with veggies.
My Filipino neighbor when I was a kid growing up in Redondo Beach made these all the time. She also added something sweet in the filling, I believe some raisins. Really good that way.

Kellie’s Italian chicken recipe: Brown 2 pounded out chicken breast salt and pepper . Dredge in flour and cook 3 to 4 minutes on each side. I use cast iron skillet. blister a small container of fresh bb tomatoes in pan add 2 cloves crushed garlic. Nestle chicken back in pan smear fresh pesto on each breast. Top with fresh mozzarella. Broil. Yum

March: Brunswick Stew A.K.A Virginia Ambrosia Stew, invented in 1828 by Jimmy Matthews, an African American chef
Ingredients: The original recipe called for Squirrel. Today, that is substituted with chicken, pork or beef (or Rabbit), along with chunks of tomatoes, potatoes, beans, corn, okra, and salt pork or bacon. The stew has a distinctively smoky flavor due to smoking the meats before adding them to the pot, accompanied by a hefty dose of barbecue sauce.
Ingredients:
4 Tablespoon butter
3 cloves garlic,, minced
1 large yellow onion,, finely chopped
1 (15 oz) can fire roasted tomatoes (undrained)
4 cups chicken stock
1 1/2 cups barbecue sauce, (I used Sweet Baby Ray's)
2 Tablespoon Worcestershire sauce
1 Tablespoon brown sugar
1/4 teaspoon cayenne pepper
1 1/2 pounds smoked pulled pork, (or chicken)
8 oz. frozen corn
8 oz. frozen lima beans
Salt and pepper, to taste
Instructions:
0. Smoke Chicken, Pork or Beef (Or Rabbit)
1. Melt butter in a large Dutch oven over medium-high heat. Once melted, add the garlic and onions and sauté until soft, about 5 minutes.
2. Stir in the tomatoes, chicken stock, barbecue sauce, Worcestershire, brown sugar, cayenne, smoked pork, lima beans, corn and salt and pepper.
3. Bring the mixture to a boil, then reduce to a simmer and cook over medium-low heat for 1 1/2 hours, stirring occasionally.
This slowly went from lumpia to just any other spring roll.
Cilantro? Yah… no…
It’s more than likely good but that’s not lumpia anymore. It’s not even fusion lumpia.

Beef Wellington Stuffed Wontons
Ingredients
* 1/2 pound lean ground beef (90% lean)
* 1 tablespoon butter
* tablespoon olive oil
* 2 garlic cloves, minced
* 1-1/2 teaspoons chopped shallot
* 1 cup each chopped fresh shiitake, baby portobello and white mushrooms
* 1/4 cup dry red wine
* 1 tablespoon minced fresh parsley
* 1/2 teaspoon salt
* 1/4 teaspoon pepper
* 1 package (12 ounces) wonton wrappers
* 1 large egg
* 1 tablespoon water
* Oil for deep-fat frying
Directions
1. In a small skillet, cook beef over medium heat until no longer pink, breaking into crumbles, 4-5 minutes; transfer to a large bowl. In the same skillet, heat butter and olive oil over medium-high heat. Add garlic and shallot; cook 1 minute longer. Stir in mushrooms and wine. Cook until mushrooms are tender, 8-10 minutes; add to beef. Stir in parsley, salt and pepper. 2. Place about 2 teaspoons filling in the center of each wonton wrapper. Combine egg and water. Moisten wonton edges with egg mixture; fold opposite corners over filling and press to seal. In an electric skillet, heat oil to 375°. Fry wontons, a few at a time, until golden brown, 60-90 seconds on each side. Drain on paper towels. Serve warm.

March: Brazilian Cheese Bread aka Pao de Queijo
Ingredients
4 cups tapioca flour
1 1/4 cups milk
1/2 cup water
6 tablespoons oil
1 1/2 cups grated parmesan cheese
1 cups shredded Mozzarella cheese
2 large eggs
2 teaspoons salt
Instructions
Preheat oven to 400F degrees with a rack in the middle.
Combine the milk, water, oil and salt in a saucepan and bring to a boil over medium high heat.
Add the tapioca flour to the bowl of a stand mixer and, once the milk mixture boils, pour it over the flour. Turn the mixer on and mix it well. The texture will be fondant-like, really white and sticky.
With the mixer still on, add the eggs, one at a time. You will think they won't mix, since the tapioca flour mixture is so sticky, but hang in there cause they will.
Once the eggs are incorporated, add the cheese, a little at a time, until fully incorporated.
The dough is supposed to be soft and sticky. However, if you're worried it's too liquidy, add some more tapioca flour. Just don't over do it or your cheese bread will be tough and not too gooey.
To shape the balls, wet your hands with cold water and, using a spoon, scoop some of the dough to shape balls that are a little smaller than golf-sized.
Place the balls on a baking sheet covered with parchment paper and bring it to the preheat oven.
Bake for 15-20 minutes or until they are golden and puffed.
Serve them warm! 🙂
You can also make them into little breakfast sandwiches by cutting open and adding fried egg and favorite breakfast meat like bacon or sausage.

Chicken & andouille jambalaya
2 whole chickens boiled the day before and shredded (keep all the broth)
2-3 pounds andouille sausage (smoked sausage will work) sliced into small rounds
1 pound of boneless pork shoulder cut into small chunks
1 pound Tasso (pickeled pork) cut into small chunks
2 bags frozen seasoning mix veggies (onion, bell pepper, and celery)
3 pound bag of long grain rice
1 jar minced garlic
Seasoning mix (mix in a bowl and keep on side) I make in large batches and just keep
15-20 bay leaves
2/3 cup salt
2/3 cup cayenne pepper
2/3 cup dried oregano
1/2 cup white pepper
1/3 cup black pepper
1/4 cup dried thyme
In large cast iron pot brown meat (works best in batches to get crispy bits on all meat). Once browned remove meat and keep drippings in pot and sauté veggies until tender. Once veggies done add in meat, rice, 3/4 of seasoning mix and chicken broth. Enough chicken broth should be added to cook the rice. Stir occasionally until pot comes to boil. Once boiling let boil for 2-3 minutes while storing and then cover, reduce heat and let go 30-45 minutes until rice is tender. For color in end add a cap fills of kitchen bouquet.
Serve with toasted French bread

Love lumpia. I grew up with a Filipino family. We learned to make them without precooking the meat and wrapping them raw letting the oil cook everything at once.
You cook the pork first because it the longest to cook. So you don't get sick. Most the veggies cook when you fry the wrap till golden brown.
Sauce I love and grew up on Tabasco with ketchup. Like 70% tab, 30%ketchup.

Fall off the Bone Dutch Oven Ribs
For one rack:
In a bowl mix 1 can of tomato soup and same amount of ketchup
-Tsp of garlic powder
-Tbs of spicy mustard
-Tbs of whorchester sauce
-Tbs of plum sauce or brown sugar anything sweet
-1/4 cup of soya sauce
-Sliced small onion
-Slices of green or yellow sweet pepper
– side ribs are the best
I cut and boil them for 5-10 mins then dip them in the sauce put in a roasting pan
Then pour the remaining sauce over them and cook covered at 300 for 2 hours
If you do a double pack of ribs double the sauce ingredients
I don't measure the ingredients I just squirt so this is approximately the measurements
Serve with rice or mashed potato’s and pour sauce over top!
I've only ever used frozen seperated wrappers.
March: Green Onion Cakes ala "Green Onion Cake" Man (Northern Chinese Recipe)
2 cups of flour
½ teaspoon baking powder
⅛ teaspoon baking soda
1 cup of water
1.5 teaspoons salt
Mix all the dry ingredients together and add the water to mix a sticky dough with your hands. Did I mention it was sticky?
Knead the dough until the dough ball feels about the density of your cheek when you poke it. (So the man says)
Let it rest covered with kitchen wrap in the bowl for about 10 to 15 minutes.
Finely chop up 1 bunch of green onions and put in a bowl. add ½ teaspoon sesame oil and a teaspoon of softened shortening( or butter) to the onions. You don't want them super greasy.
Roll the dough out in to a large rectangular sheet, dusting with flour as required (to a thickness of less than 1/2cm). Now evenly spread your green onion mixture on the dough , covering the full surface of the dough. Then roll up the dough like a log, keeping it as tight as you can. The more rolls you get, the more layers of crispiness you will get. Cut the log into 6 equal littler logs. Now comes the fun part:
– Pinch each end of the log shut.
– Twist the log in the direction you rolled it. It should tighten up. (If it is getting looser then twist in the opposite direction).
Now hold the log between both of your palms and flatten the log into a disc by bringing your hands together while twisting your palms in the same direction as you did above. Note, you can also give it a roll of the rolling pin to flatten the cake out a bit more.
Fry the cake in a bit of neutral cooking oil until golden brown. Flip and do the same to the other side.
Serve with dipping sauce made of Soy sauce, garlic chili paste (or chilie crisp paste), wine vinegar.
Enjoy while the cakes are still hot and crispy.

Hot Dog, Mashed Potato and Baked Bean Casserole
(Do this recipe but upgrade/home make the 3 main ingredients)
4 mediumd potatoes peeled and cubed
2 Tbsp butter
1/2 c shredded cheddar cheese
15 oz can of baked beans
4 all beef hot dogs cut into slices
1In a medium pot add water and some salt. Cook the potatoes until soft. Drain and stir int the butter, , salt and pepper. if too dry add a little milk. Set aside.
2 Preheat oven 425 degrees. Mix the hotdogs with the beans. Place in bottom of baking dish. Top with mashed potatoes then cheese.
3 Bake 15 minutes.

March: beer – take glass add cold beer (tilt glass slightly to begin the our and then straighten the glass as it fills; 1/2” foam on top is ideal)

you need to make some Adobo fried rice , pancit, chicken and pork adobo..When I make mine I finally chop , onion , celery , carrots, black pepper, MSG, fresh ground pork, egg soy sauce fresh garlic fresh grated ginger.. mix well, spread 2 T of the meat mixture , seal with egg wash , roll tight in Lumpia wrappers, This is Lumpia Shanghai. do not add too much filling or it will not cook well or oil that is too hot will burn.. My mom taught me to shallow fry.. make sure your oil is at 350
