MY ABSOLUTE FAVORITE CHICKEN & RICE DISH THAT I PICKED UP TRAVELING… | SAM THE COOKING GUY

IIt was on our trip to Singapore that I realized something very important: Hainanese Chicken and Rice is hands down my favorite chicken and rice dish—no matter the country, no contest.

This iconic Singaporean meal is simple, satisfying, comforting, and absolutely packed with flavor. Perfectly poached chicken, fragrant rice cooked in chicken broth, and a trio of sauces that take it all to the next level.

If you’ve been wanting to try an authentic Hainanese chicken recipe, or just need a solid Hainanese chicken rice recipe to add to your rotation, this is it. Let’s make some magic.

We really just have one goal – to make your food life better. Ok that, and be entertained at the same time. And have you learn a few things along the way. So let’s make it 3 goals then.

If you only want the steps to make something, like those vids shot from above with no people, no conversation no nuthin – then we are absolutely not for you. But if you wanna a little fun while you learn, then this is the place.

Cooking doesn’t have to be hard, it just has to be delicious.

THANK YOU ❗️

  1. Sam, it's not that I didn't believe you when you said we'd want to put that sauce on everything. But I did not expect it to be so literally true. I want a gallon of it in my fridge at all times.

  2. I love your chicken and rice recipes! You have made me fall in love with cooking again! Thanks for being real and not feeling like you have to sensor yourself. Cathy

  3. my feedback: scaled all ingredients up.
my rice cooker and appetite is big. plus this dish as leftovers is delicious

wash rice in the rice cooker pot, no need to dirty extra dishes and it’s going in there anyway

buy boneless thighs if really short on time. i dont debone meat as fast as Sam so this step probably took the longest prep time. downside is no bones for broth but perhaps i should debone meat more often to skill up/be faster

bonus tip: for mincing ginger used in sauce i peel ginger with a spoon, cut them into large chunks then SMASH with chinese cleaver. its so much easier to mince this way

  4. This was good. The sauce by far was the best part. We didn’t have chicken thigh so I took a chance with boneless breast. Not bad, not dry. I think a little more liquid is appropriate as some of the rice was slightly burnt. I used jasmine rice with a 1:1 ratio with stock as directed, but when I make the same rice on its own it’s 1.5 parts liquid to 1 part rice. Maybe it’s the rice, maybe it’s the cooker, but for me I would up the liquid if I made this again.

  5. Whenever I try finding other recipes from other Youtube channels I always seem to come back to this channel. Sam thanks for the delicious recipes. Maybe more shell fish recipes like lobster 🦞
