  1. Never ever have I thought of cutting up a pork butt like this to make steaks. Always thought it had to be cooked lo low and slow essentially over night. Waking up in the morning you have put the proper seasonings on before it hit the oven and you Carnitas the next day. Which is not bad but I am so thrilled to see the way you have expanded the culinary options for this piece of meat. Kudos!!

  2. Just made this for the family and it turned out fantastic! They especially loved the pork steaks. Never grilled pork before without a precook in the oven. Can’t wait to make this again.

  3. Who actually fell for Sam’s Sales gimmick aa couple weeks ago when he said he was “giving” away “free” 5 wagyu steaks to 5 lucky winners? He said I was “selected” to receive one of those steaks, and all That needed to do was select the shipping method that was best for me by choosing from choices he provided. The shipping costs were between $150 – $200 to ship my “free” steak! I laughed so hard i almost pooped my pants! Thanks Sam, but no thanks! Fuckin scammer!

  4. Of course Sam would specify “Pork Butt”. Pork BUTT*, also known as Boston BUTT, is a section of the Pork Shoulder (top part closer to spine). Clean tasting AND best of all… TONS of marbling. Make the best Steaks. And Fantastic for making Mexican Carnita Tacos and Pulled Pork for anyone not on a diet (high fat and taste).

    * Called “BUTT due to what the pork used to be stored in NOT because it comes from that part of the pig. “A Butt Load”. = Barrel Load

  5. You complain about 80 last week it was 104 here in Austin. Then the rains came, and then floods. Don't complain about 80 it makes you look childish but then again that's why it's so expensive to live there. Because it's beautiful weather and I like it

  6. My husband is allergic to coconut so what can I use instead of coconut milk because that sounds like something I could do but like I said my husband is deadly allergic to coconut and pecans

  7. Sure Sam knows, but filming order & all; never dress (add liquid) to your salad until service. Throw salad/dessert plates in freezer, & hot entree plates in warm oven!Timing & plate temp are game changers!

  8. Schnucks Grocery started selling "Pork Steaks" in St. Louis in the 1950's. We've been eating them all our lives in the Flyover states. Grew up eating Pork Steaks slathered with Maull's or Show-Me Sauce. This is not a surprise

  9. Just tried the salad. Well, everything was fine until we tasted the salad….OMG…. It was so hot and spicy. We used just half a teaspoon of that Chile spicy oil….. The salad was just too spicy. If you do it, just skip the chilly oil….or just reduce the quantity to a few drops.

  10. The meat playing off the greens is synergistic.
    Both courses are all the better for it.

    Have forwarded to my 12 year old who will be very stoked. (If that is still a thing).

    Edit: Made it! Feeding only 3 so started with precut shoulder steaks. Garlic and ginger added to the dressing. Green onion, peanut and cilantro garnish.

    This was phenomenal

  11. We northern plains folks have been butchering our own pigs for generations, and before it was cool to smoke whole butts for pulled pork, and out of necessary thriftiness, we always had the shoulders sliced into steaks. Best. Damned. Bite. Out. There!
