Dude! You should try boiling Yukon gold's, diced, cook up some good chorizo throw in the spuds and brown them, use them in tacos, burritos 👍
It takes a LOT of time to make Yukon Gold Potatoes oxidize. Not like the Russets like you blow on them and they start to go.
