  1. This might the best recipe for real chicken soup I've seen and there's a lot of good ones out there. Since I cook for just one, I freeze it into individual serving sizes. Then, after thawing, when I re-heat it, I add the noodles so they can cook in the soup/broth. This recipe is a home run!

  3. Rainbow carrot use warning! I just spent the day making a big batch & am so sad & frustrated after all that $, time, effort, pain (disabilities add to my struggle bus) to, in the end, have purple soup! Just 2 purple carrots (orange in the center) totally turned the broth from beautiful light brown to a wholly unappetizing purple-brown. The chicken, noodles…everything has a purple hue. (And it was all for 2 friends who are currently sick. ) Think Bridget Jones & the blue soup.

    So never again. Going forward? Its store bought broth, costco rotisserie chicken, & ORANGE carrots for this girl. 🤦‍♀️😩

  4. I just peel all my vegetables and put them in with the bones. Always use the outer skins of the onions and the celery tops. Then I add water and 2 tsp of apple cider vinegar and put in the instapot for 90 mins to 2 hours to get the bone broth. Then I sauté all the chopped vegetables in a pan and add to the broth and put the lid back on the instapot for 25 mins. I usually use rice instead of pasta because if it t swells it’s so small it doesn’t soak up everything.

  5. Delicious flavor! The chicken didn’t get dry after 3 hours of cooking! I was impressed 😮 However it was super tender and taking it out of the pot made it fall completely apart. And then even though I tried shredding it into bigger pieces once added to the pot again it shredded into very tiny pieces.

I did not follow to a T because I did not have the time, WAS doing on a weekday because I’m pregnant and saw a picture of chicken noodle soup in the morning so I HAD to have chicken noodle soup lol. But I did roast the chicken first before boiling and yea it does give it more flavor! I simmered for a bit over an hour once chicken was cooked and it was delicious!
