TURKEY INGREDIENTS:
16 lb Turkey, preferably fresh, cleaned, giblets and neck removed and patted dry
3 Tbsp of Coarse Kosher Salt (I use Mortons)
1-1/2 Tbsp of Brown Sugar
Freshly Cracked Black Pepper
1 Stick (1/2 cup) of Unsalted Butter, softened at room temperature
Zest of 1 Lemon
2 Cloves of Garlic, grated
1 Tbsp of Very Finely Chopped Rosemary
1 Tbsp of Finely Chopped Thyme
1 Tbsp of Finely Chopped Parsley
Small Pinch of Salt
1 cup of White Wine
2 cups of Chicken Stock
Aromatics such as whole onions cut in half, lemons, celery, carrots, apples, herbs and garlic
3 Tbsp of Flour

  1. I tried it this week it was spectacular and oh so juicy..
    Temperature that I followed:
    My turkey was 17 lbs so
    *First 30 minutes i cooked it uncovered on 445.
    *then 3 hours cooked on 345 ( covered with foil completely)
    *AFTER 3 hours turkeys temp was 160.. I put it at 400 for another 20 minutes.
    * let it rest 20 minutes
    And voilaa

  2. I’ve been the “turkey dinner” provider for the last 30+ years, and Ive gotta say just this.
    Thaw turkey, rinse with salt water and pat dry, stuff then place in shallow roaster with NO water and NO cover. Rub surface of the bird with olive oil and salt and pepper. Bake at 325 degrees till leg/thigh is easily pulled away from body.
    These are Butterball’s directions and have not changed in 30 years. If anyone knows how to cook a bird, I’d say they know

  4. Laura does a really good Turkey..And so does Jamie Oliver ( who is very much inspired by Italian style cooking methods and culture) For ex He uses a spoon to push up& stretch the skin

  5. I’ve been using this video for the past 5 years. My dad got older abs was in charge of turkey for years and when I took over no one in my family thought I would be able to take over the tradition and my whole family praises me every year that it’s better than my dads ❤

  6. Laura, I want to do my turkey this way, for my big feast, but I don't have access to a natural un brined turkey all my stores carry is butterball, please help and let me know if I can still make this deletable looking bird for my family

  7. Seriously invest in a Maverick thermometer or one of the newer wireless insertable meat probes. Takes ALL the guess work out of it. My Maverick is many years old but has served me well. Its wired so not a handy but one probe in the breast and the other on the oven rack. You'll be surprised on how wild your oven temp actually is. Pulley mine at 165 breast temp and rested for 2 hrs. Amazing
