Made this. Seems like we always have the Boursin cream cheese on hand. It was fun and different. Enjoyed the potato chip garnish. The only thing I didn't care too much for was the hot melted cream cheese on the inside. To me just the wrong texture for an omelet filling. Whatever! Enjoy!

Hey Sam huge fan of your show. Love all the cooking you do and the creativity you put in to boring dishes that we all know and love and you turn it up a notch! Which is amazing. I would love to see you make steak on toast with garlic butter sauce and a side of your choice. That is by far one of my top favorites to make. What's wrong with green onion? Love the small kick it provides. Chives are just too mellow.
If you stir the eggs in the pan with a fork, it adds fluffiness as it cooks. I have a silicone fork for this purpose, so I don't scratch the pan.
Shaking the pan and stirring…anyone else thinking of rubbing your belly in circles and tapping your head for level of difficulty or just me? 🙂

I've used crushed chips in a number of ways over the years. Often getting weird looks from others until they try it. Lol. But, never on eggs. Hmmm…..
