The name of the cookbook was “The Silver PALATE”, not “The Silver SPOON”!
I made this for Thanksgiving – using the SIlver Palate recipe – and it was good – we don't eat Turkey. It was just for Dad and myself. I think the use of garlic in this case – was not prudent. I think if you roast or poach the garlic – then paste it that way – it takes the edge off. Just sayin'.

I will skip the onions when cooking for a crowd. Maybe garnish with some chopped scallions.
Do you think this could be made an hour before dinner guests arrive and just be kept in the oven on warm with foil over it?

An alternative meat could be rabbit. Just for Europeans, of course, but it should work well.I watch you in France.
